Stir-fried cucumbers with beef

Ingredients

Quantity Ingredient
250g lean rump or fillet steak
2 teaspoons sesame oil
1 tablespoon light soy sauce
1/2 teaspoon salt
1/2 teaspoon sugar
1/4 teaspoon cayenne pepper
2 telegraph cucumbers
1 tablespoon vegetable oil
2 tablespoons sesame seeds, toasted and crushed

Method

  1. Partially freeze the beef, then cut into paper-thin slices.
  2. In a bowl, combine the sesame oil, soy sauce, salt, sugar and cayenne pepper. Add the beef and mix well by hand so the flavourings penetrate the meat.
  3. Peel the cucumbers, leaving a thin strip of green skin at intervals for decorative effect. Cut each in half lengthways, scoop out the seeds then cut widthways into thin slices.
  4. Heat the vegetable oil in a wok or large heavy-based frying pan over high heat. Add the beef and stir-fry for 1 minute. Add the cucumber and stir-fry for a further 1 minute, then let the mixture simmer until the cucumber is tender but still crisp. Garnish with the sesame seeds and serve hot with white rice.
