Ingredients

Quantity Ingredient
1-2 crisp cooking apples, peeled and cut into thin matchsticks
1/2 lemon, juiced
2 large daikon, peeled and cut into thin matchsticks
3 spring onions, thinly sliced

Dressing

Quantity Ingredient
3 tablespoons light soy sauce
1 tablespoon light olive oil
2 teaspoons sesame oil
60ml rice vinegar or mild white vinegar
3 teaspoons sugar
1 teaspoon salt
1 tablespoon sesame seeds, toasted and crushed
1 fresh red chilli, seeded and finely chopped

Method

  1. To make the dressing, combine all of the ingredients in a small bowl.
  2. Soak the apple in cold water with a good squeeze of lemon juice to prevent discolouration. Drain well.
  3. Combine the daikon, apple and spring onion in a serving bowl with the dressing and toss to combine. Cover and refrigerate before serving.
