These flattened-out kernels of the melinjo nut are sold in packets and only require a few seconds frying in hot oil.

Ingredients

oil, for deep-frying
melinjo nuts

Method

  1. Heat the oil in a wok or large heavy-based saucepan over medium heat. When the oil is hot, deep-fry the melinjo nuts, in batches, spooning the oil over them as they cook, which should take less than 1 minute — do not let them get more than light brown or they will be bitter. Lift them out quickly using a slotted spoon and drain on paper towel. Sprinkle lightly with salt before serving as an accompaniment to a meal or as a nibble with drinks.
