Tomato salad with mint and spring onions

Ingredients

Quantity Ingredient
4 firm red tomatoes
6 spring onions
10g fresh mint leaves
60ml lemon juice
1/2 teaspoon salt, or to taste
2 teaspoons sugar
1/2 teaspoon chilli powder, (optional)

Method

  1. Peel the tomatoes and cut into thin wedges. Thinly slice the spring onions and chop the mint leaves. Mix the lemon juice, salt, sugar and chilli powder, if using, together. Stir until the sugar dissolves, then pour over the combined ingredients and mix lightly but thoroughly. Cover and chill until serving time.
