Spicy fried onions or leeks

Ingredients

Quantity Ingredient
5-6 large leeks
or 3 large onions, peeled
2 tablespoons ghee or oil
1 teaspoon panch phora or cumin seeds
1 teaspoon ground turmeric
1 teaspoon fresh ginger, finely grated
1 teaspoon Garam masala
1 teaspoon salt, or to taste

Method

  1. Wash the leeks well, if using. Thickly slice the leeks or onions.
  2. Heat the ghee in a large saucepan over low heat. Add the panch phora and stir-fry for 1–2 minutes, then add the turmeric and ginger and stir-fry for 1 minute. Add the leek or onion and continue stir-frying for 5 minutes. Sprinkle the garam masala and salt into the pan, cover, and cook until tender. Serve hot.
