Tea is one of Sri Lanka’s main export crops and drinking it is a national pastime. Tea is served at all times of the day, either black, with milk or milk powder when fresh milk is not available and with sugar, jaggery or spices such as ginger. Tea is always served to visitors when they arrive at a Sri Lankan home and can be bought from roadside stalls in most streets throughout the country.

Ingredients

Quantity Ingredient
4 cups water
3 cardamom pods
1 cinnamon stick
1 slice ginger
2 cloves
4 heaped teaspoons black tea leaves
4 teaspoons condensed milk

Method

  1. Place water and spices in a pot and bring to the boil over medium heat. Remove from the heat, add tea and leave for 2–3 minutes. Serve with condensed milk on the side and add to taste.

Variation

  • Instead of serving with condensed milk, add 1/2 cup milk to the water when you add the tea and serve with 2 tablespoons honey on the side.
