This sambol is beautiful served with biryani or lamb curry – you need just a little as the flavour is quite strong.

Ingredients

Quantity Ingredient
1 cup fresh mint leaves, tightly packed
1 onion, chopped
4 garlic cloves, sliced
2/3 cup desiccated coconut
1/4 cup sultanas
1 green chilli, sliced
1/4 teaspoon salt
1/2 teaspoon freshly ground black pepper
1/2 lime, juiced

Method

  1. Wash and drain mint leaves. Place in a food processor or mortar and pestle and grind with onion, garlic, coconut, sultanas and chilli. Season with salt, pepper and lime juice.
