Ingredients

Quantity Ingredient
1 bunch kangkung
1 tablespoon oil
1/2 cup onion, sliced
1 green chilli, sliced
1 tomato, diced
1/4 teaspoon crushed dried chillies
1/4 teaspoon salt

Method

  1. Break the stems off the water spinach and discard.
  2. Heat the oil in a shallow pan over medium heat and add onion, green chilli and tomato. Cook until golden brown – about 1 minute. Increase heat to high, add kangkung, crushed chilli and salt, and quickly stir-fry, tossing until leaves are cooked but still hold their shape.

Tip

  • The pan must be very hot or the spinach will wilt.

Variation

  • Any of your favourite leafy greens can be prepared in the same style.
