Ingredients

Quantity Ingredient
2 1/2 cups white vinegar
3 cups sugar
500g pitted dates
4 teaspoons garlic, crushed
3 teaspoons ginger, crushed
2 teaspoons ground mustard seeds
1 teaspoon mixed spices
1 tablespoon chilli powder
2 teaspoons salt
1 cup sultanas
salt, to taste

Method

  1. Put the vinegar and sugar in a pan over low heat and heat for about 2 1⁄2 minutes, until the sugar is dissolved. Add the rest of the ingredients except sultanas and salt. Cook for about 25 minutes, stirring occasionally, until mixture is thick but not gluggy.
  2. Remove from heat; add sultanas and salt to taste. Leave to cool. Store and seal in sterilised bottles.
  3. This teams well with hot curries, especially fish curries, and dried pork curry.
