Bang-bang cucumber with spicy peanut furikake

Crunchy and punchy cucumbers sprinkled with our spicy peanut furikake. Use in place of pickled cucumbers as a side to most poke bowls or a bowl of miso soup.

Ingredients

Quantity Ingredient
2-3 small japanese cucumbers
or 1 large english cucumber
Spicy peanut furikake

Dressing

Quantity Ingredient
2 tablespoons tabasco or west indian hot sauce
1/2 lime, juiced
1/2 red chilli, thinly sliced
1 teaspoon olive oil
1 teaspoon water
pinch sea salt

Method

  1. Place the cucumbers on a chopping board, then gently hit with a rolling pin to flatten and break up. Pull apart into small chunks with your hands or roughly slice. Mix the dressing ingredients together, then toss the cucumbers in the dressing. Serve in small bowls and top with a generous sprinkling of the Spicy Peanut Furikake.
