This delicious dessert is like a fruit flan and is traditionally made with black cherries. You can also try making it with rhubarb, plums or berries. It puffs on cooking and will sink slightly as it cools – when set it should still wobble slightly.

Ingredients

Quantity Ingredient
spray oil
425g canned sliced peaches, drained
1 large banana, peeled and sliced
2 eggs
2 tablespoons caster sugar
1/4 cup plain flour
2 cups low-fat milk
1 teaspoon vanilla paste
1 tablespoon brown sugar
low-fat custard, to serve
icing sugar, to serve

Method

  1. Preheat the oven to moderately hot, 190ºC. Lightly spray a 20 cm round casserole dish with oil.
  2. Arrange the peaches and banana over the base of the prepared dish.
  3. In a bowl, whisk together the eggs and sugar until pale. Gradually blend in the flour, then the milk and vanilla until smooth.
  4. Pour this mixture over the fruit and sprinkle with brown sugar. Bake for 25–30 minutes until set. Serve dusted with icing sugar and drizzled with custard.
