Ingredients

Quantity Ingredient
30g light margarine
1 tablespoon plain flour
1 cup low-fat milk

Method

  1. Place the margarine in a small saucepan and heat gently until it melts. Blend in the flour and cook over a medium heat, stirring, for 1 minute.
  2. Remove the pan from the heat and gradually blend in the milk until smooth. Return to the heat and cook, stirring, until the sauce boils and thickens. Lower the heat and simmer for 3 minutes to cook the flour thoroughly.

Variations

  • –Add reduced-fat cheese, chopped herbs, sautéed mushrooms or green onions.

    –Use as the basis for a creamy fresh tomato soup.
