Ingredients

Quantity Ingredient
400g canned three bean mix, drained and rinsed
50g green beans, trimmed and blanched
1 small red onion, sliced
1/4 cup semi-dried tomatoes
2 tablespoons pitted green olives, sliced
1 tablespoon basil, chopped
50g haloumi cheese, sliced thinly
2 tablespoons flour, seasoned
spray oil

Dressing

Quantity Ingredient
1 tablespoon olive oil
1/2 lemon, juiced

Method

  1. Combine the bean mix, green beans, onion, tomatoes, olives and basil in a large bowl.
  2. To make the dressing, whisk together the oil and juice and toss through the bean mixture.
  3. Pat the cheese slices dry with paper towels and dust in flour, shaking off any excess.
  4. Heat a non-stick frying pan on medium. Spray with oil and cook the cheese slices for 1–2 minutes on each side until golden. Drain briefly on paper towels and scatter into the salad.
