Ingredients

Quantity Ingredient
1 fennel bulb, trimmed and thinly sliced
400g canned lima beans, drained and rinsed
100g snow peas, trimmed and blanched
1 small red onion, thinly sliced
1/2 red capsicum, seeded and thinly sliced
1/2 cup basil leaves
1/4 cup capers
1 teaspoon celery seeds

Dressing

Quantity Ingredient
2 tablespoons red wine vinegar
1 tablespoon extra-virgin olive oil
1 garlic clove, crushed
1 teaspoon dijon mustard

Method

  1. Combine all the ingredients, except the celery seeds, in a large mixing bowl.
  2. To make the dressing, whisk all the ingredients together.
  3. Just before serving pour on the dressing and toss the salad well. Sprinkle with celery seeds.
