This delicious combination of flavours is perfect to accompany many meals, but we love it with honey-rosemary rack of lamb – simply make the lamb without the tomatoes. If you don’t have cherry tomatoes, use 500 g of roughly chopped tomatoes. Sliced leek makes a delicious addition to this dish.

Ingredients

Quantity Ingredient
500g cherry tomatoes, halved
2 zucchini, thinly sliced
1 tablespoon oil
1 cup fresh wholegrain breadcrumbs
1/2 cup reduced-fat tasty cheese, grated

Method

  1. Preheat the oven to moderate, 180ºC. Lightly grease a 1 1/4 litre ovenproof dish.
  2. Place the tomatoes and zucchini in a mixing bowl and toss with the oil. Spoon into the ovenproof dish.
  3. Mix the breadcrumbs with the cheese and sprinkle over the vegetables.
  4. Bake for 40–45 minutes, until golden and bubbly.
