These recipes are very simple and give pretty much instant results. The no-cook syrup is especially good as it is so economical – a brilliant way of extracting more flavour from your citrus discards. Do not limit yourself to sugar, by the way. You can also gently warm honey until it is just liquid, add pared zest and then decant back into the jar – this will infuse gently until the honey is used up and is particularly good over yogurt or for use in hot toddies.
