Sweet potatoes glazed with clementines or mandarins

I love sweet potatoes with citrus as the sour/bitter does a great job of balancing what can sometimes be a slightly cloying sweetness. I think they deserve the three-way approach here; they’re very good for us, after all.

Ingredients

Quantity Ingredient
1 garlic clove, finely chopped
2 clementines or mandarins, Finely grated zest
4 clementines or mandarins, juiced
1 lime, juiced
1 teaspoon sugar or runny honey
2 sweet potatoes, preferably white, peeled and cut into chunks
1 red chilli, julienned
a few chives, finely snipped
sea salt

Method

  1. Put the garlic, clementine or mandarin zest and juice and half the lime juice into a wide saucepan or frying pan. Add the sugar or honey and cook on a low heat, stirring until the sugar or honey has dissolved. Bring to the boil and cook down until the mixture is very lightly syrupy – you don’t want it too dense. Remove from the heat and season with salt.
  2. Meanwhile, toss the sweet potatoes in the remaining lime juice and season with salt. Steam over boiling water for 6–7 minutes. Transfer to the frying pan and very gently turn over in the syrup. Garnish with the red chilli and the chives.
