Left-over roast veg focaccia with smoked cheddar and roast beef

Ingredients

Quantity Ingredient
4 focaccia rolls
190g Smoked tomato relish
large handful baby english spinach leaves
8 slices left-over or deli-bought roast beef
2-3 cups left-over roast potato, pumpkin, sweet potato, carrot, onion or even garlic
200g smoked cheddar cheese, grated

Method

  1. Heat a sandwich press or a large heavy-based frying pan over medium heat.
  2. Slice the focaccia rolls in half and spread the base with the tomato relish, then top with the spinach, beef, roasted veggies and cheese. Close the focaccia with the remaining slices. Toast the sandwich in a sandwich press (or frying pan, cooking both sides) until the outside is golden and the cheese is oozing and gooey.
