Eggplant chips with spicy kewpie mayo

These eggplant chips are crispy on the outside and creamy on the inside. I use kewpie mayo as it’s a bit more acidic than regular mayonnaise. I’ve spiced it up with a little sriracha hot chilli sauce, which is a Thai-style fermented chilli sauce that’s actually made in the United States.
