Easiest dark choc mousse

This mousse is great for dinner parties. You can make it ahead of time and have it all portioned up in small serving glasses, ready to go for your guests.

Ingredients

Quantity Ingredient
150g dark chocolate, at least 70% cocoa solids
1 egg, lightly beaten
150ml pouring or whipping cream

Method

  1. Place the chocolate in a heatproof bowl over a saucepan of simmering water. Gently melt the chocolate and remove from the heat once it’s almost melted. Let the chocolate cool for 2 minutes, then whisk in the egg.
  2. In a separate bowl, whisk the cream to stiff peaks.
  3. Fold the cream through the chocolate mixture then place in the refrigerator to chill and set, about 1 hour. Serve.

Brent’s tips:

  • If you want the mousse thinner, then fold through some extra whipped cream; and if you want it thicker, reduce the amount of cream you add.

    A dusting of chilli powder adds a complex and interesting dimension to this simple mousse.

Variation

  • To make jaffa mousse, add the zest of 1 orange to the mixture.
