Ingredients

Quantity Ingredient
50g streaky bacon, cut into 5mm dice
400g raw peeled prawns
1/2 garlic clove, crushed
1 small crusty french loaf, cut on the bias into slices 2.5cm thick
50g benne seeds, or sesame seeds
sea salt
freshly ground black pepper

For the sweet and sour peach relish:

2 large oranges, juiced
4 limes, juiced
1 lemon, juiced
15g fresh ginger, thinly sliced
4 large peaches, stoned and cut into eighths
35g caster sugar
16 drops tabasco habanero sauce

To garnish:

freshly torn mint

Method

  1. First make the peach relish. Put the citrus juices and ginger into a saucepan and bring to a rapid boil. Add the peaches, return to the boil, then cover and reduce the heat to a simmer. Cook the peaches for no more than 2 minutes, until just tender. Stir in the sugar, habanero sauce and a pinch of salt. Purée immediately in a blender to make a smooth, brightly coloured paste. Chill straight away to preserve the colour.
  2. Put the bacon in a dry frying pan over a medium heat and leave until the fat is rendered. Transfer the bacon and its fat to a mixing bowl. Roughly chop the prawns until they are beginning to break down slightly but still chunky. Add to the bowl with the garlic and mix well. Season with salt and black pepper.
  3. Place a small mound of shrimp on each piece of bread, covering it completely. Place on a baking tray and sprinkle the benne or sesame seeds generously over the top. Place in an oven heated to 200°C and bake for 5–7 minutes, until the bread is toasted and the shrimp is cooked through. Garnish with mint and serve with the relish.
