Chilli and chocolate go hand in hand, but you don’t want to overdo it. The cayenne pepper added to the chocolate is just enough to give you a nice heat sensation on the palate; it also helps to enhance the richness of the chocolate.

Ingredients

Quantity Ingredient
200g dark chocolate, roughly chopped
125ml thickened cream
1 teaspoon cayenne pepper, plus extra for dusting
4 * sweet pastry tart cases [rid:4133]

Chocolate glaze

Quantity Ingredient
100g dark chocolate, roughly chopped
50g unsalted bu­tter
125ml thickened cream

Method

  1. To make the chocolate glaze, put the chocolate and butter in a heatproof bowl. Heat the cream in a saucepan until boiling point, then quickly remove from the heat and pour over the chocolate. Let the chocolate soften for a minute, then stir until the chocolate has melted. Set aside to cool.
  2. To make the filling, put the chocolate in a heatproof bowl. Heat the cream in a saucepan until boiling point, then quickly remove from the heat and pour over the chocolate. Let the chocolate soften for a minute, then stir until the chocolate has melted. Add the cayenne pepper and stir to mix well. Set aside to cool.
  3. Put 4 tart cases on a tray and pour the chocolate mixture into the cases until almost full, about 3 mm from the brim. Place in the refrigerator to set for 30 minutes.
  4. Take the tarts out of the refrigerator and pour the glaze on top, filling each case to the brim. Set at room temperature, then sprinkle with extra cayenne pepper before serving.
