Grilled prosciutto-wrapped figs with chèvre, almond and honey

Sometimes the simplest food can be the most gratifying. This dish is a good example: sweet syrupy honeyed figs and sharp goat’s cheese wrapped in crispy prosciutto. Need I say more?

Ingredients

Quantity Ingredient
12 ripe figs
6 strips prosciutto, cut in half lengthwise
12 toothpicks
20g chèvre
20g butter
4 tablespoons honey
handful almond flakes

Method

  1. Preheat the oven to 240°C. Remove the stalks on the figs, then cut them into quarters, starting from the top and cutting only halfway down, leaving the base intact. Using both thumbs and index fingers, gently squeeze the base of the figs to open them up.
  2. Wrap each fig with a slice of prosciutto and secure it with a toothpick. Stuff each fig with a teaspoon of chèvre, then place on a baking tray. Put a small knob of butter on top of the figs, drizzle with the honey and then sprinkle over the almond flakes. Place the figs on the top rack in the oven and bake for 10 minutes, or until the figs are scorched a little and the prosciutto is slightly crisp.
