When Josh Davidson told me that he’d made up this drink, I was torn between admiration for him having invented one of the most popular drinks on the menu and at the same time wanting to punch him in the nose for it being so time consuming.

Ingredients

Quantity Ingredient
1 lemon wedge
icing sugar
4 strawberries, green stems removed
3-4 fresh mint leaves, torn, plus extra to garnish
a dash lemon juice
30ml Żubrówka vodka
30ml absolut citron or other dry lemon vodka

Raspberry coulis

Quantity Ingredient
250g fresh or frozen raspberries
55g sugar
10ml lemon juice

Method

  1. To make the raspberry coulis put the raspberries, sugar and lemon juice in a small saucepan and cook over low heat, stirring often, until the raspberries break down and the sugar has dissolved. Remove from the heat, then push the coulis through a sieve using the back of a wooden spoon. Refrigerate until chilled.
  2. When you are ready to start making the drink, rub the lemon wedge around the rim of a brandy balloon, then dip the rim in icing sugar to coat up to 3 mm.
  3. Crush the strawberries roughly with a muddler so they release a lot of juice but don’t break up too much. Add the mint, lemon juice, Żubrówka vodka and lemon vodka. Add 60 ml raspberry coulis to the shaker with some crushed ice and shake for 15 seconds. Pour into the prepared brandy balloon and garnish with a small mint leaf and a larger mint leaf.
