Ingredients

Quantity Ingredient
300ml whipping cream
100g dark chocolate, roughly chopped
250g strawberries, hulled and quartered
50g icing sugar
8 scoops vanilla ice cream
200g ready-made chocolate brownies, crumbled
50g ready-made peanut brittle bar, roughly chopped
1 cup dried sliced coconut, toasted
4 mint sprigs

Method

  1. Firstly, make your sauces. Pour 100 ml of the cream into a small saucepan and heat until almost boiling. Add the chocolate, whisk until smooth and set aside.
  2. For the strawberry sauce, combine the strawberries and icing sugar in a small saucepan. Bring to the boil. Transfer to a blender and purée until smooth. Set aside.
  3. Whip the remaining cream.
  4. Divide all the crumbled brownies among four chilled glasses. Place one scoop of ice cream in each glass.
  5. Top with half the chocolate sauce and half the strawberry sauce.
  6. Add some peanut brittle and whipped cream.
  7. Repeat in the same order, finishing with the whipped cream.
  8. Garnish with the coconut and mint. Serve straight away.
