This master stock can be stored for an indefinite period in an airtight container in the fridge. Just boil it for about 5 minutes prior to each use.

Ingredients

Quantity Ingredient
300ml dark soy sauce
250ml light soy sauce
100ml shaoxing rice wine
100g rock sugar
3 star anise
1 cinnamon stick
1 dried long chilli
2 pieces dried mandarin peel
6 slices fresh ginger
6 spring onions, trimmed
500ml water

Method

  1. Combine all the ingredients in a large saucepan and simmer until the sugar has dissolved.
  2. Let stand until cool so the flavours steep and then you can use it as a marinade or a cure for meats. There is no need to strain.
  3. Store in an air-tight container in the refrigerator until required. The master stock can be frozen if not required for some time.
