This simple Indian-inspired rice dish is fantastic served alongside a curry.

Ingredients

Quantity Ingredient
1/4 cup sunflower oil
1 teaspoon mustard seeds
2 teaspoons chana dal, (also known as Bengal gram)
1/2 cup cashews
5g fresh curry leaves
1 teaspoon ground turmeric
1 teaspoon asafoetida
1 teaspoon ground ginger
500g pre-cooked rice
1 lemon, juiced
salt
freshly ground black pepper
1/2 cup coriander leaves, to garnish

Method

  1. Heat the sunflower oil in a saucepan over medium heat. Add the mustard seeds and chana dal and toast until they start to pop. Add the remaining ingredients, except the seasoning and coriander, and thoroughly combine.
  2. To serve, season with salt and pepper and garnish with coriander.
