These shallots are agrodolce, which means sweet and sour. Small, tender shallots work best. They go really well with most roast meats.

Ingredients

Quantity Ingredient
200g french shallots, peeled
100g butter
100ml water
3 long sprigs thyme
100ml balsamic vinegar
1 garlic clove, crushed

Method

  1. Place the ingredients in a saucepan. Cover and simmer for about 30 minutes, or until the shallots are soft and the balsamic, butter and water have reduced and become homogenous, but not separated.
