Ingredients

Quantity Ingredient
2 garlic cloves, finely chopped
100ml olive oil
3 tablespoons tomato passata
1/2 red onion, finely sliced
100g dry-cured spicy chorizo, thinly sliced
100g salted or fresh ricotta
100g smoked mozzarella, roughly torn
small handful wild rocket
sherry vinegar, to taste

Method

  1. Combine the garlic and olive oil. Brush the pizza base with the garlic oil, and spread the tomato passata evenly over the top. Scatter with onion and chorizo, and dot with ricotta and mozzarella.
  2. While the pizza is cooking, combine the rocket and sherry vinegar to taste. When the pizza is ready, scatter with the dressed rocket.
