Ricotta is such a creamy and delicate flavoured cheese that it makes it the perfect spread to accompany seasonally sweet heirloom tomatoes.

Ingredients

Quantity Ingredient
2 slices bread of choice
2 large heirloom tomatoes, sliced
2 heaped tablespoon ricotta
small handful basil leaves
small handful pine nuts, toasted
salt
freshly ground black pepper

Method

  1. To pack, fill a large lunch box with bread wrapped in cling film, tomatoes, a small container filled with ricotta, and basil and pine nuts sealed in separate small bags.
  2. To assemble, spread the ricotta over the bread and top with the tomatoes. Sprinkle the basil and pine nuts on top and season well.
