For this delicious antipasto of home-cured fresh fish you can use slices of filleted salmon, swordfish, tuna, trout, herring, mackerel, sturgeon, anchovies, or even sliced scallops.

Ingredients

Quantity Ingredient
1 thin slice 4 types of very fresh fish fillet
1 teaspoon caster sugar
salt
2 tablespoons extra virgin olive oil
1 tablespoon fresh lemon juice
2 tablespoons dill, finely chopped
pepper

Method

  1. Make sure that all the bones are removed from the fish. Arrange the various fish slices on a stainless-steel platter, sprinkle with the sugar and season with a little salt and pepper. Pour over the olive oil and lemon juice. Sprinkle over the chopped dill and leave to marinate, uncovered, for at least a few hours before serving.
