Italians love preserved meat, particularly pork, which comes in all sorts of shapes, sizes and tastes. Salami, prosciutto and the exceptional dried and cured beef, bresaola, are often displayed on platters and accompanied by pickled vegetables like mushrooms, gherkins, onions and olives – which can all be bought in any good supermarket or Italian delicatessen.

Ingredients

Quantity Ingredient
a few slices felino salami
a few slices napoli salami
a few slices calabrian hot sausage
a few slices parma ham
or a few slices bresaola
or a few slices mortadella
grissini
or crostini
or unsalted crackers

Method

  1. Display the meats ‘artistically’ on a platter, and bring through to the guests to help themselves. Usually grissini (crisp thin breadsticks), crostini (pieces of toasted bread) or unsalted crackers are eaten with the meats. It is important that they are unsalted because the preserved meats contain salt.)
  2. The most significant thing about this dish is that you don’t need to cook at home, as everything is available from a good delicatessen.
