Cart-driver spaghetti

This recipe goes back to the time when the agricultural people from the country drove into town in carts pulled by horses and donkeys. The driver knew how to cook something unusual and extremely tasty for himself when he reached his destination.

Ingredients

Quantity Ingredient
200g spaghetti
salt and pepper

Sauce

Quantity Ingredient
1 small onion, peeled and finely sliced
4 tablespoons olive oil
2 ripe tomatoes, finely chopped
25g dried porcini, rehydrated and finely sliced
100g canned tuna in oil, drained

Method

  1. For the sauce, fry the onion in a pan with the olive oil until soft, about 5–6 minutes, then add the tomatoes and fry for 15 minutes. Add the sliced porcini and some of their liquid, along with the tuna and some salt and pepper to taste.
  2. Cook the pasta in plenty of boiling salted water until al dente, about 5–6 minutes. Drain, mix with the sauce and serve immediately.
