Chicken rolls with duxelles

This is an extremely simple recipe to cook, providing you have some mushroom purée or duxelles already made.

Ingredients

Quantity Ingredient
4 large boneless chicken breasts
2 quantities Wild mushroom duxelles
60g butter
2 tablespoons olive oil
1 lemon, juiced

Method

  1. Beat the chicken breasts with a meat cleaver between 2 sheets of clingfilm.
  2. Spread a quarter of the duxelles over each breast, then roll up, securing with a wooden cocktail stick.
  3. Fry in the butter and oil until brown all over, about 3 minutes on each side.
  4. Pour the lemon juice over the chicken and serve with a little of the fat.
  5. Accompany with steamed spinach and a potato purée.
