Oat porridge with orange, marmalade + thyme compote

This compote was developed on a cold winter’s day. It was inspired by my dad and his love of marmalade on toast in the mornings, which, to me, epitomises the breakfasts of my childhood. It has proved a popular choice at our pop-up breakfast bar.

I’ll often serve this on top of porridge with a sprinkling of our Cinnamon + Pecan Granola for an added crispy texture.

Orange, marmalade + thyme compote

6 oranges
5 fresh thyme sprigs
1 tablespoon marmalade

Porridge

Quantity Ingredient
125g oats
250ml water
250ml milk

Topping

Cinnamon + pecan granola

Method

  1. To make the compote, peel the oranges and discard any pith.
  2. Using a sharp knife, segment the oranges to get the juiciest part of the fruit, collecting any juices.
  3. Bring the orange flesh and juices to the boil in a pan with the thyme and marmalade. Leave to simmer gently for about 30 minutes, then remove from the heat and leave to cool.
  4. To make the porridge, place all the ingredients in a pan and cook over a medium heat for 5–10 minutes.
  5. Divide the porridge into bowls. Top with a spoonful of the compote and a scattering of the granola.
