Nut butters are so easy to make at home. Simply choose your favourite nut, roast it, season a little, then whizz the hell out of it in a blender until you reach your desired consistency. Turns out the same can be done for granola. You can add a little extra oil to this recipe, to loosen up the texture – the result is a gooey granola butter that can be enjoyed on top of porridge or as an energy-lifting snack with fresh apple. If you’re using coconut oil, melt it gently in a pan first.

200g peanuts
200g Cinnamon + pecan granola
or 200g any granola of your choice
1 tablespoon coconut oil, melted, plus extra if required
or peanut oil, plus extra if required

Method

  1. Preheat the oven to 180°C.
  2. Place the peanuts on a baking tray and place in the oven for 15 mins. Remove and leave to cool.
  3. Blend the granola and roasted peanuts for up to 5 minutes, adding oil little by little, until you reach the consistency you are happy with.
  4. If you like an even smoother texture, add an extra teaspoon of oil.
