Issy was an important part of our first launch event, where she gave an inspiring class in food photography. The chai gives a unique take on these poached pears, which Issy recommends with our Cinnamon + Pecan granola.

Ingredients

Quantity Ingredient
350ml water
3 chai tea bags
1 cinnamon stick
4 tablespoons maple syrup
3 ripe pears, peeled
100ml greek yoghurt
favourite granola, for sprinkling

Method

  1. In a small, deep saucepan, bring the water to the boil. Remove from the heat, add the tea bags and cinnamon stick and leave to infuse for 10 minutes.
  2. Remove the tea bags, squeezing them firmly, so they release as much of their flavour as possible into the water. Stir in the maple syrup.
  3. Add the peeled pears (the water should cover them) and bring the water back to a gentle simmer. Poach the pears for 20–25 minutes, or until soft.
  4. When soft, remove the pears together with the cinnamon stick and put to one side. Bring the poaching liquid to a rolling boil and simmer for 15–20 minutes until it thickens and goes syrupy.
  5. To serve, spoon the yoghurt generously between 3 shallow bowls. Place a poached pear in the middle of each bowl, pour over some of the reduced poaching syrup and sprinkle with your choice of granola to finish.
