Coconut milk curbs my cravings for something creamy without feeling like I'm over-indulging. I've added maple syrup here, but for those wanting to cut down on sugar, the coconut and vanilla provide enough natural sweetness on their own.

200ml coconut milk
125g jumbo oats
1 tablespoons chia seeds
1 tablespoon maple syrup
1/2 vanilla pod, seeds scraped
or 1/2 teaspoon vanilla extract

Topping

sliced banana
blueberries

Method

  1. Place all the ingredients for the Bircher in a mixing bowl and stir to combine.
  2. Cover and place in the fridge overnight.
  3. The next morning, divide the mixture into 2 bowls and serve with the suggested toppings.
