Serve this classic tomato salad with plenty of bread to soak up the lovely juices.

Ingredients

Method

  1. Slice 4 large, ripe tomatoes. Place the slices on a platter and sprinkle with some sea salt flakes. Finely chop 2 small shallots and sprinkle them over the tomatoes. Drizzle with 2 tablespoons of really good olive oil and about 2 teaspoons of red wine vinegar. Season with freshly ground black pepper and garnish with chopped flat-leaf parsley.
