Try this fresh little starter: prawns piled on top of pieces of mango and avocado, drizzled with a tasty dressing.

Ingredients

Quantity Ingredient
1 ripe mango
2 avocados
200g cooked peeled prawns
fresh coriander leaves or lime wedges, to serve

Dressing

Quantity Ingredient
3 spring onions, finely shredded
3 tablespoons lime juice
2-3 tablespoons thai sweet chilli sauce
3 tablespoons fresh coriander leaves, finely chopped
sea salt
splash water

Method

  1. Combine all the ingredients for the dressing, then set aside.
  2. Peel and dice the mango and avocados, and arrange the pieces on individual plates or in glasses. Place a small pile of prawns on top. Give the dressing a good stir, then spoon it over the salad. Garnish with a few extra coriander leaves or lime wedges, and serve more or less at once.
