Our vinaigrette

There are hundreds of ideas on how to make the perfect vinaigrette. Lately, we prefer to make our dressing this way.

Ingredients

Quantity Ingredient
1 garlic clove
A pinch sea salt
freshly ground black pepper
2 tablespoons red wine vinegar
1/2 teaspoon honey
1/2 shallot, finely chopped
6 tablespoons olive oil

Method

  1. Peel and lightly bruise the garlic clove (don’t use a garlic press or the flavour will be too acrid). Place the garlic in a small bowl with the salt, pepper, vinegar and honey. Add the finely chopped shallot and set aside to macerate for 10 minutes, then stir in the olive oil.
  2. Remove and discard the garlic clove. Briefly whisk the dressing and season to taste. Drizzle the vinaigrette over lettuce leaves, toss gently to lightly coat the leaves and serve.

Creamy mustard dressing

  • Follow the recipe for the vinaigrette. Omit the garlic if you like, but add 1 tablespoon coarse-grained mild mustard just before adding the oil. Whisk or stir the dressing; the mustard makes it a bit creamy. Serve with mixed lettuce leaves, salads with cheese or in a potato salad.
