Baked salmon on spinach

This is an incredibly simple way to serve salmon – baked on a bed of tender spinach leaves. The recipe originally comes from Swedish chef and restaurateur Nils Emil Ahlin.

Ingredients

Quantity Ingredient
800g skinless salmon fillet
1 tablespoon olive oil or soft butter
200g baby english spinach
1 heaped teaspoon sea salt
freshly ground white pepper
300ml thick cream
100ml dry white wine
4-5 tablespoons grated parmesan cheese

Method

  1. Trim the salmon if necessary, remove any small bones with tweezers, then cut the salmon into 4 pieces. Grease an ovenproof dish with the olive oil or soft butter.
  2. Pick through and rinse the spinach leaves well. Gently pat them dry or spin them in a salad spinner. Arrange the spinach in the greased dish. Place the fish on top and season with salt and white pepper.
  3. Carefully pour a mixture of the cream and wine over the salmon and then sprinkle the grated parmesan on top. Bake at 175°C for 20-25 minutes. Serve with boiled potatoes.
