A simple and flavourful way to smarten up some leftover cold roast beef.

Ingredients

Quantity Ingredient
300g cold roast beef, thinly sliced
fresh chives and flat-leaf parsley, finely chopped

Marinade

Quantity Ingredient
100ml red wine
2 teaspoons japanese soy sauce
1 teaspoon dijon mustard
3 tablespoons fresh thyme, chopped
1 garlic clove, crushed
100ml beef stock

Method

  1. Spread out the roast beef slices in a wide glass or porcelain dish. Combine the marinade ingredients and spoon over the meat. Cover and chill for 1-2 hours. Discard any excess marinade. Roll the roast beef into rolls, arrange on a platter and sprinkle generously with finely chopped chives and parsley.
