Mousse with limoncello

When you want a small yet luxurious dessert, this one is easy to whip up. You will need lemon curd – either homemade using the recipe on the right, or good-quality store-bought – and a bit of sweet Italian lemon liqueur.

Ingredients

Quantity Ingredient
250g mascarpone
150ml lemon curd
200g see method for ingredients
2 tablespoons fresh lemon juice
1-2 tablespoons honey
1 egg white
2 tablespoons limoncello
amaretti biscuits, crushed, to serve

Method

  1. Combine the mascarpone and lemon curd, both at room temperature, with the crème fraîche. Flavour with the lemon juice and honey.
  2. Beat the egg white until stiff and then carefully fold into the mascarpone mixture. Spoon into small individual glasses, cups or bowls. Top with a small splash of limoncello, then sprinkle with crushed amaretti biscuits.
