This is an enduring favourite of ours, refreshing as both a table beverage and a thirst-quencher on a hot day.

Ingredients

Quantity Ingredient
4 tablespoons pearl barley
3 organic lemons
90g caster sugar
3 litres water

Method

  1. Boil the pearl barley in 1 litre of water for 30-40 minutes.
  2. Meanwhile, scrub the lemons in hot water and dry them well. Peel off the yellow lemon peel using a potato peeler. Place the strips of lemon peel and the sugar in a stainless steel bowl. Set the lemons aside for now.
  3. Bring 2 litres of water to the boil and pour it over the lemon peel. Pour in the cooked pearl barley, cooking water and all, and let cool. Squeeze the lemons and stir the juice into the mixture in the bowl. Strain and store in the fridge for no more than 5 days. Serve the barley water chilled, preferably without ice.
