This dark, glossy chocolate sauce is just as good with poached ginger pears as it is with ice cream. If you wish to make a larger batch, just multiply the recipe.

Ingredients

Quantity Ingredient
100ml water
100g caster sugar
40g cocoa, sifted

Method

  1. Put the water and sugar into a small saucepan. Bring to a quick boil and simmer, uncovered, for 1-2 minutes. Remove the pan from the heat. Sift in the cocoa and stir the sauce until smooth. Strain the chocolate sauce, if necessary.
