This is a quick concoction that I eat for breakfast at least twice a week. This simple dish shows that Indian food is not all spices and heat. There are no spices in this dish – just good flavours and a little sliced green chilli for punch. Once you start to eat eggs cooked in this way, it is difficult to enjoy them plain.

Ingredients

Quantity Ingredient
1 teaspoon vegetable oil
small knob butter
1/4 small onion, peeled and finely chopped
2 eggs
1/2 small tomato, finely chopped
1/2 green chilli, finely sliced
1 heaped tablespoon chopped fresh coriander
salt, to taste

Method

  1. Heat the oil and butter in a nonstick frying pan. Add the onion and cook for 2 minutes.
  2. Meanwhile, whisk the eggs with the tomato, chilli, fresh coriander and salt. Add the eggs to the pan and scramble as you would normally, leaving them a little longer than usual.
