This is the ultimate cuppa. It is what women across India make when they have friends over. It offers solace and comfort and is invigorating and relaxing all at the same time. I drink a cup every morning without fail and no other tea does it for me anymore.

Ingredients

Quantity Ingredient
350ml water
100ml milk
4 black peppercorns
10 green cardamom pods
good pinch green fennel seeds
small shard cinnamon
8g fresh ginger, peeled and roughly sliced
1 tea bag
sugar, to taste
slightest pinch salt, (optional)

Method

  1. Heat the water, milk, spices and ginger in a pan. Once it comes to a boil, reduce the heat and cook over a low-moderate heat for 15 minutes. Be careful as the milk easily boils over. If this is about to happen, reduce the heat and take the pan off the heat for a few seconds.
  2. Once reduced to a large cupful, add the tea bag and let it brew for 1 minute, or more if you like strong tea. Strain into your cup and add sugar or salt, to taste.
