This lassi is really refreshing and the fragrance of the lemon zest is pure summer. Good-quality, fresh yoghurt will stop this drink being too tart. I love it – it is better than lemonade and lighter than a milkshake or smoothie. Perfect for a healthy, outdoor life.

Ingredients

Quantity Ingredient
240ml good-quality fresh plain yoghurt
200ml water
3 tablespoons sugar, or to taste
2-3 teaspoons lemon juice, or to taste
1 1/2 small lemons, fine zested
ice cubes, to serve
2 sprigs fresh mint

Method

  1. Blend together the yoghurt, water, sugar, lemon juice and zest until light and frothy. Adjust the sugar and lemon to taste. Pour into tall glasses filled with ice cubes and the mint and serve.
