Sautéed sweetcorn with peppers

This dish is good for those with a vata body type and those who are a balanced kapha (corn is quite sweet so should be eaten in moderation if you are overweight). Corn also suits pitta as it is sweet and cool. The onions and peppers add a wonderful, almost Mexican flavour to the dish and lighten the sweet starchiness of the corn. A great side dish for all.

Ingredients

Quantity Ingredient
2-4 teaspoons vegetable oil, ghee or butter, (kapha 2 teaspoons oil; vata 3 teaspoons and pitta 4 teaspoons oil, ghee or butter)
1 small onion, peeled and finely chopped
1/2 large red pepper, chopped into 1 cm pieces
2 small ears corn, kernels cut off with a knife
1 green chilli, pierced with the tip of a knife, (pitta avoid)
2 small garlic cloves, peeled, left whole but crushed to release the flavour
freshly ground black pepper
1/2 teaspoon ground cumin
3/4-1 teaspoon lemon juice, or to taste
handful fresh coriander leaves, chopped
salt

Method

  1. Heat the oil in a medium non-stick saucepan. Add the onion, corn, pepper, chilli, garlic and salt. Sauté the vegetables over a moderate heat, stirring often, until they are soft, around 8 minutes, adding a small splash of water after 4–5 minutes.
  2. Once cooked, add the ground cumin and lemon juice to taste, then adjust the seasoning and stir in the fresh coriander leaves. Remove the garlic and chilli and serve.
